Buckwheat germinates in 2–3 days.
Buckwheat microgreens contain vitamin B₁, B₂, B₃ and vitamin E, iron, potassium, copper, magnesium and phosphorus. They contain around 12% of protein and all essential amino acids (especially glycine).
Benefits: buckwheat sprouts are appetising, they cleanse the body, regulate cholesterol and blood sugar levels, as well as improve digestion. They are also effective against anemia and physical fatigue.
Use in: salads, as breakfast, in smoothies or for garnishing.
