Broccoli microgreens are rich in vitamin A, B, C, E and K. They are also excellent sources of calcium, iron, magnesium, phosphorus, potassium and zinc. They contain pigments such as carotene, chlorophyll, amino acids, enzymes and antioxidants.

Benefits: broccoli microgreens contain glucoraphanin. When broccoli sprouts are eaten, glucoraphanin is converted to sulforaphane by an enzyme such as myrosinase. Sulforaphane has been scientifically proven to have cancer-causing and negative effects. Broccoli sprouts are rich in fiber. Fiber helps to relieve constipation. It helps maintain a healthy digestive system and promotes regular digestion, which is vital for the daily elimination of toxins through bile and stool. Eating dough promotes a healthy complexion and hair growth, gives more energy and can have a weight-loss effect. Just one cup of chopped broccoli provides 92 micrograms of vitamin K. This is well over 100% of the daily requirement, an adequate amount of vitamin K improves bone health by improving calcium absorption.

Use of sprouts: in salads, smoothies, butters, pasta dishes, as a garnish for soups, etc.
